FRESH & SEASONAL · Sweet & Savoury
A little inspiration for your next pasta night, with a nod to Ottolenghi. This FMO adaptation pairs our carrot pasta with caramelised onions, crispy sage and hazelnuts.
The inspiration
Inspired by Ottolenghi’s caramelised onion orecchiette with hazelnuts and sage. We have adjusted the quantities and cooking method for frozen Fuel Me Once pasta. This is an independent serving suggestion, not a collaboration or endorsement.
At a glance
Serves: 2 adults · Pasta: 300g, weighed frozen · Method: Boil, then fold through · Dietary: Vegan
Cooking from frozen
Cook Fuel Me Once pasta directly from frozen. Follow your pack instructions. Prepare it separately, then gently fold into the onions.
Why we love it
A slower supper for an evening when you have a little time to enjoy cooking. Put a pack on the counter only when you are ready to cook it and let the onion pan do most of the work.
What you’ll need
300g Fuel Me Once carrot pasta
2 onions, thinly sliced (about 320g)
4 tbsp olive oil
10g fresh sage leaves, dry
30g hazelnuts, roughly chopped
1 tbsp lemon juice, to taste
Salt and black pepper
Let’s cook
1. Crisp the sage
Warm the oil over medium heat. Fry sage until crisp, then lift out.
2. Give the onions time
Gently cook onions in that oil for 25–35 minutes until golden, stirring regularly. Add a splash of water if catching.
3. Toast the nuts
Toast hazelnuts in a dry pan, stirring until fragrant.
4. Cook the pasta
Boil FMO from frozen following the pack. Reserve a little cooking water and drain gently.
5. Bring it together
Fold pasta into onions with lemon and seasoning. Loosen with cooking water as needed. Finish with nuts and sage.
The little chef’s trick
Have your serving bowls ready before draining. FMO pasta is best handled gently, so fold with a broad spoon rather than shaking the pan vigorously.
Make it yours
Prefer a firmer finish? Cook FMO using the pan-frying directions on your pack before adding it to the prepared onion mixture.
How much pasta should I use?
One 300g pack gives two suggested 150g adult portions. Adjust for appetite and what you serve alongside. Weigh the pasta while frozen.
Allergens and dietary information
Contains wheat (spelt) and hazelnuts. Check all ingredient labels. The standard FMO carrot and spelt pasta is not gluten free.
